The Cook at Acute Rehabilitation Hospital of Plano prepares food in accordance with standard menus and specifications, facility procedures, and prescribed dietary and sanitary regulations; follows recipes; ensures proper storage of food and supplies; supports meal service; directs and assists in cleaning work areas, equipment, and floors; ensures all patients have received meals; and follows all fire and safety practices and procedures.

Job Responsibilities:
Safe Food Handling
• Understands and follows guidelines for food handling and storage, including
all raw and prepared foods.
• Completes the daily Quick Check departmental review in the absence of the
Nutrition Services Manager (NSM) or as requested.
• Tests and records temperatures of hot and cold foods and records
temperatures of cold food storage areas. Corrects or reports negative results
to the attention of the supervisor.
• Properly discards expired or contaminated food items.
• Properly performs and enforces handwashing, use of gloves, and hair
restraints.
• Complies with established infection control and universal precaution
policies and procedures and uses required protective wear when performing
daily tasks.
Food Preparation
• Follows and enforces methods to control cross-contamination.
• Prepares foods using standardized recipes and in the required amounts
specified by production worksheets and in accordance with special diet
requirements.
• Uses available tools (spreadsheets, prep-at-a-glance, production guides) to
ensure timely and accurate meal production and portion control. Incorporates
proper steps to pull, thaw, and prep foods in advance of production needs.
• Ensures foods are prepared and delivered at designated meal service
times to support in-room dining schedules while maintaining food quality,
proper temperature, and appearance standards.
General Food Service Duties
• Serves meals in accordance with facility methods using proper portion
control and plating/presentation guidelines. Provides a texture-appropriate
garnish for all entrées.
• Performs daily and scheduled cleaning of kitchen and equipment in accordance
with established sanitation procedures.
• Ensures serving lines and work areas are cleaned and sanitized after each
use.
• Cleans and organizes food storage areas.
• Properly stores, chills, and reheats leftovers for later use.
• Is responsible for proper use of the three-compartment sink and cleanup
of cooking pots and pans.
• Assists other department staff as needed to ensure timely production,
service, and cleanup.
• Responsible for kitchen closing procedures in accordance with policy and
regulatory requirements.
• In the absence of the NSM, is responsible for overall departmental function
and compliance and will maintain communication with the Administrator and/or
Director of Nursing.
• Performs other duties as assigned.
Job Requirements
• One (1) year of experience as a cook in a hotel, restaurant, hospital,
rehabilitation center, or similar institution preferred.
• Food Handler’s Card required, or Food Safety Certification where required by
local ordinance.
• Must have a fundamental understanding of sanitation, cleanliness, and
personal hygiene.
• Must be able to tactfully communicate with coworkers, patients, family
members, visitors, government agencies, and the general public.
• Must have regular, predictable, and dependable attendance.
